Oven BBQ'd Chicken

An easy recipe with lots of flavor!

1 (3-3 1/2 pounds) fresh chicken, cut into 8 pieces, skin removed (optional)
3-4 TBS Doc Kendrick's BBQ Rub
2 TBS vegetable oil

Combine Doc's BBQ Rub with vegetable oil in a small bowl. With fingers (or pastry brush), rub mixture over both sides of each piece of chicken. If you've left the skin on, try to get as much of the rub under the skin as possible for best results.
Place coated chicken on a rack in a shallow baking pan. Cover with plastic wrap and refrigerate 1-2 hours.
Preheat oven to 400 F. Bake chicken about 50 minutes, or until juices run clear when the thickest part of the chicken is pierced with a knife.

Makes 4 main-dish servings.
