Doc's Twice as Nice Pie Spice livens up these tasty classic cookies.

3 cups all-purpose flour
2 teaspoons cream of tartar
1 teaspoon baking soda
1/2 teaspoon salt (optional)
1 cup butter (2 sticks), softened
1 1/3 cups plus 1/4 cup sugar
2 large eggs
1 teaspoon vanilla extract
1/2 teaspoon almond extract
2 teaspoons Doc Kendrick's Twice as Nice Pie Spice

Preheat oven to 375° F. Combine dry ingredients in a medium bowl, set aside.
In a large bowl with mixer at medium speed, cream butter and 1 1/3 cups of sugar until light and fluffy. Beat in eggs, one at a time, until blended, add vanilla and almond extracts. Reduce speed to low, beat in flour mixture just until combined.
Mix remaining 1/4 cup sugar in a small bowl with Doc's Twice as Nice Pie Spice. Shape dough into 1 inch balls; roll in sugar mixture to coat evenly. Place each ball on parchment lined cookie sheet, about 1 inch apart. Repeat with remaining dough.
Bake until set, and slightly crinklely on top, about 12 minutes. Cool cookies for a minute on sheets; with spatula, transfer cookies to wire racks to cool completely.

Makes about 54 cookies.
